Peanut Butter Granola.
1 1/4 cup peanut butter
1 1/4 cup honey
2 1/2 tsp vanilla
2 1/2 tsp cinnamon
10 cups oats
Preheat oven to 350 degrees. Spray two cookie sheets with non stick cooking spray and set aside.
Heat peanut butter and honey over medium heat until combined and smooth. Add the vanilla to the peanut butter and honey and stir. Remove from heat. In a large bowl combine oats and cinnamon. Pour the peanut butter mixture over the oats and cinnamon and combine until all the oats are coated. Pour half the oats onto each cookie sheet. Bake for 8 minutes, remove from oven and stir the oats around a bit. Return them to the oven to bake for an additional 8 minutes. When you remove the oats from the oven the second time they will still be a bit soft. Don't worry- they harden as they cool. Give the granola another quick stir and leave it to cool. When the granola is completely cool store in an airtight container.
