Chewy Chocolate Peanut Butter Cookies.




I won the prize for "coolest mom" on Friday.  Wanna know why?  The children and I baked cookies for lunch.  Now I didn't say I won the prize for "healthiest mom" so don't judge.  We were plum out of brown sugar so we had to search the recipe binder a bit.  This chewy chocolate peanut butter cookie recipe is what we came up with.  And since Abby declared "These are the best cookies ever!" while we were partaking, I decided I'd better share the recipe with you dears.  You know, because the "coolest mom" crown is up for grabs today.



Chewy Chocolate Peanut Butter Cookies

Ingredients:
  • 1 1/4 c. butter
  • 2 c. sugar
  • 2 eggs
  • 2 t. vanilla
  • 2 c. flour
  • 3/4 c. cocoa
  • 1 t. soda
  • 1/2 t. salt
  • 2 c. peanut butter
  • 2 c. chocolate chips

Directions:

Preheat oven to 350 degrees F.

Cream butter and sugar until fluffy.  Add eggs and vanilla and beat well.  Combine dry ingredients and gradually blend into creamed mixture.  Stir in peanut butter and chocolate chips.  Drop spoonfuls onto cookie sheet.  Bake 8 minutes.

  1. Those look good. I have just the opposite problem--an abundance of brown sugar. I'll welcome suggestions for what to make with that to earn the coolest mom crown. Enjoy your lunch!

  8. This was a great recipe. My 13 year old needed a recipe he could make for a family party. (Thank you scouting for requiring these boys to learn skills like cooking, hosting a social event, and making family life so important.) The cookies were delicious and enjoyed by all.

  9. Unfortunately, being allergic to peanut butter puts a nix on this dessert for me. However, I gave the recipe to my sister who said to thank you because her twins "can't get enough"!

    Oh, and as someone that eats & serves things like Burger King Buck Doubles & Baked Apple Pudding for lunch...I will never ever judge you!

  13. These look delicious, so I'm glad you were out of brown sugar! However, consider doing an internet search for brown sugar recipes. It's very easy to make your own from molasses and granulated sugar, and it's cheaper. Thus, if keep molasses on hand for cooking, and you'll always be able to mix up brown sugar as well.
