Fruit Pizza.

Yesterday was a happy, sunny day. To celebrate the extra hour of sunlight the children convinced me to make one of our favorite summer time desserts. I only had strawberries and blueberries on hand for toppings, but no one seemed to mind. Delicious! Wanna make one too?

Fruit Pizza

1/2 C. butter
3/4 C. sugar
1 egg
Beat until light and fluffy.
Add 1 t. cream of tarter
1/2 t. soda
pinch salt
1 1/3 C + 2 T. flour
Press into sprayed pan, bake 12 minutes @350.
Let cool.

8 oz cream cheese
1/2 C. sugar
2 T. pineapple juice
Mix together and spread over cooled crust.
Top with fresh fruit.

  1. This is one of our summer favorites too! Sometimes we even use the store bought sugar cookie dough for the crust (even easier!)

  2. We love Fruit Pizza too!

I've been craving something bright and summery. This looks divine!

  3. This looks awesome. I could use some of that for breakfast this morning.

  4. Fruit pizza definetly gets me in the mood for summer! Yum! Thanks for sharing your recipe.

  5. I have never had it with pineapple in the spread. We WILL be trying this!:)

  6. This looks delicious! Thanks for sharing :)

  7. I've never made it with cream cheese in the frosting! We usually used vanilla or banana pudding (and skipped the bananas on top - browned too quickly) but I made it recently with fat free, sugar free banana pudding and added in about half a container of fat free cool whip and it was AMAZING. So easy and light to spread, consistency of frosting but guilt free.

  8. I need this to remind me of summer since it is snowing AGAIN!! Looks delicious.

  9. I have not had fruit pizza in so long, it looks yummy! I'm craving some fresh summer fruit.

  10. I have never made one. Your picture is making me want to try.

  11. A friend of mine was the one who taught me to make this and it's been a favorite ever since.
